Rainbow Salad
Rainbow Salad
You can get really creative when making your rainbow salad - adding different flavors to make it more or less sweet or savory. Here are some of my favorites:
- Red: Tomato, red bell pepper, red onion, cranberries, cherries, strawberries, pomegranate, red apple
- Orange: Carrot, orange bell pepper, orange slices, mango
- Yellow: Yellow bell pepper, corn, lemon, pineapple, summer squash
- Green: Chopped spinach, romaine, arugula or other leafy green; cabbage, avocado, broccoli, asparagus, zucchini, snow or snap peas, cucumber, green bell pepper
- Blue/Purple: purple cabbage, blueberries, blackberries, purple carrots, purple cauliflower, plums, olives, purple kale, grapes
- White/Tan/Brown: seeds (flax, hemp, chia, sesame, sunflower), cauliflower, mushrooms, nuts, onions, quinoa, pear, legumes (garbanzos, black beans)
For my creation today I had:
Heirloom tomatoes, red onion, carrots, yellow bell pepper, arugula, cucumbers, avocado, red cabbage topped with a cilantro-lime creamy dressing
